Eggplant Black de Barbentane is a French heirloom variety of eggplant. It is well known for its dark, glossy skin and sweet, tender flesh. This variety is one of the oldest eggplant varieties and has been cultivated in the Barbentane region of France since the 19th century. It has a long, slender shape, with a deep purple-black skin and creamy white flesh. It is best eaten when young but not yet mature, as it quickly becomes bitter and spongy when it matures. It is also a popular ingredient in Middle Eastern and Mediterranean dishes and can be stuffed, baked, or stewed.
